Daniel recorded a messianic prophecy about The Son of Man who is Jesus. So by calling himself Son Of Man he was linking himself to the prophecy.

As my vision continued that night, I saw someone like a Son Of Man coming with the clouds of heaven. He approached the Ancient One and was led into his presence.
John 1:14. I Timothy 3:16. He was God manifested in flesh. The son of man Merely means the humanity or flesh that God chose to abide in while here on earth. He was fully man but he was fully God.
